Happy Pancake Tuesday

CHARTattack scribe and photographer John Papamarko reminded me that today is Shrove Tuesday, which marks the day before Lent starts.

I'm not Catholic, and I don't even celebrate Easter, but I am going to share my favourite pancake recipe with you (a variation on this one), just because:

1 1/2 cups all purpose flour
3 1/2 tbsp baking powder (yes, seriously)
1 tbsp white sugar
1 1/4 cups milk
1 egg
3 tbsp melted butter
a drizzle of honey
a couple shakes of cinnamon

Mix the dry ingredients together, make a well in the middle and set aside. Mix the wet ingredients, combine them with the dry ones, fry and there you go.

You could put the salt in if you really wanted, but it doesn't need it and I don't enjoy cooking with salt. Margarine can be substituted for the butter and it will work just fine. There's enough baking powder in the recipe that if you remove the butter and substitute margarine, it won't interfere with any "fluffiness" whatsoever.

I'd post a pancake song, but the only one I can think of is Jack Johnson's "Banana Pancakes," so I'll spare you.

I won't be eating pancakes for dinner tonight; I'll be eating the rest of the sausages cooked in a giant Yorkshire pudding that I made last night. (Probably worse for my health in the long run, now that I think about it...)

The irony of this post is John doesn't even like pancakes. Sorry, John.
